Pumpkin Sheet Cake

Ingredients

1 can (15oz) solid-pack Pumpkin
2 cups Sugar
1 cup Vegetable Oil
4 eggs, lightly beaten
2 cups all-purpose flour
2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt

Frosting

  • 1 pkg (3oz) cream cheese, softened
  • 5 tbsp butter or magarine, softened
  • 1 tsp vanilla extract
  • 1 3/4 cups confectioner's sugar
  • 3-4 tsp milk

Optional: chopped nuts

Directions

  1. Preheat oven to 350F
  2. In a mixing bowl, beat pumpkin, sugar, and oil. Add eggs, mix well.
  3. Combine flour, baking soda, cinnamon, and salt; add to pumpkin mixture.
  4. Pour into a greased 15"x10"x1" baking pan, bake at 350F for 25-30mins.
  5. Cool before frosting.

Frosting

  1. Beat cream cheese, butter, and vanilla until smooth.
  2. Gradually add sugar, mix well.
  3. Add enough milk for frosting to reach a spreadable consistency.
  4. Optional: Sprinkle with nuts.
